The Country cottage potato salad

This salad is a very extraordinary recipe; it is a very simple and takes very little time in preparing the salad.


Ingredients required for preparing the salad:

Six numbers of red potatoes (not peeled)

Mayonnaise in 2 cups

Grounded black pepper and some salt for taste.

Ten numbers of sliced green onions.

A carton (24 ounce quantity) of small curd cottage cheese

Preparation method

In a big pot, put the potatoes and with salt water cover them. Bring them to boiling condition, to a medium low, minimize the heat, cover and bubble for some 20 minutes till it gets tender. Drain them and let the steam to get dried for some one or two minutes. Once you feel that the potatoes are cool, that it can be handled, cut them into pieces of ¼ inches in thickness, then refrigerate till it gets cooled.

Take half a cup of Mayonnaise and spread them in the bottom as well as on the sides of a big salad bowl. Into the salad bowl, in a layer arrange the potato slices. With salt and black pepper season the pototes liberally. Over the potatoes, spray half of the green onions. Then slice half of the cotton cheese layer and the left behind mayonnaise. Repeat the procedure with the layers finishing with mayonnaise. Over the salad, stretch the mayonnaise so as to seal in the coating.


Then over the top of the salad, spray the black pepper and with plastic wrap cover up. Overnight refrigerate it Toss well and then serve the salad.
