Apple and Pumpkin Soup

Apple and Pumpkin Soup is sour and sweet kind of soup, this soup is great during Thanksgiving.

Ingredients:

  • 4 cups of Chicken Broth
  • 2 cups of Tart Apples that is peeled and is finely chopped
  • 3 cups of canned Pumpkin
  • 1 cup of Apple Juice; unsweetened
  • one fourth cup of packed Brown Sugar
  • 1 tablespoon of All-purpose Flour
  • one half teaspoon of Ground Cinnamon
  • 2 tablespoon of Butter
  • one half cup of Cream
  • one half cup of finely chopped onion
  • one half teaspoon of Nutmeg
  • one half teaspoon of Ginger
  • one fourth teaspoon of Salt
  • one forth teaspoon of Pepper

Procedure in making Apple And Pumpkin Soup:

 

  1. Prepare a huge saucepan and then add some butter into it.  Start to sauté the chopped apples and onions for about 3 to 5 mins or until they are tender.
  2. This time, stir in the flour and then blend very well.  Afterwards, beat in the broth as well.
  3. You may now put the ginger, apple juice, nutmeg, pumpkin, chicken broth, cinnamon, brown sugar and salt; then boil the mixture.
  4. As soon as the mixture will start fluffing up you need to lower down the heat so you may start to simmer and then keep it for at least 25 mins.
  5. Take the pan out from the heat and then set it aside to cool down..
  6. You may now prepare the blender to process the soup, put it in fractions then put it in the bowl. Keep it refrigerated for eight hours or the whole night.
  7. Cook your soup for 5 to 10 mins just before serving then stir. Decorate with cream.
