Mafruka Recipe- how to prepare Mafruka

The Mafruka is a delicious Arabic recipe, it is simple and easy to prepare.


Ingredients required for making the syrup

Sugar of one cup or 200gm qty.

Water of 6 cups or 150ml qty.

Rose cup of ¾ cup qty.

Items needed to prepare the mafruka

Ghee of 370gms or 13/4 cup qty.

Fine semolina of 1 kg qty.

Sweetened Condensed Milk of one tin or 395 gms qty

For the cream the ingredients required

Sweetened Condensed Milk of one tin or 395 gms qty

water of 3 cups qty

Corn flour of 3/4cup or 100gms qty

Rose water of 2 tablespoon qty

Mixed unsalted toasted nuts of one cup qty (hazelnuts and almonds) of 1cup or 180gms for garnishing purpose.

Preparation Method

The Syrup can be prepared by mixing Rosewater, Water and Sugar, and boil on moderate heat till somewhat thickened.


Melt the Ghee in a deep sauce pan, include Semolina and cook on average low heat till it gets golden brown in colour.


Include the one tin of Sweetened Condensed Milk and the Syrup and mix till it gets smooth.


Mix Sweetened Condensed Milk, water, rose milk, corn flour in a separate sauce pan, on medium heat stir them till it gets thick. Then remove and keep it away to get cooled.


Mafruka should then be spread on a big platter, then spread the cream on Mafruka’s top, and use nuts to garnish it.
