Hyderabadi Chicken Biryani Recipe (Raw Yaqni)

  • Ingredients:
  1. Chicken : 2 (1 kg. each)
  2. Basmati Rice : 1 kg
  3. Oil/Dalda ghee : 10 table spoon
  4. Onion : 5 medium size
  5. Lemon : 4 Ea.
  6. Yogurt : 2 small
  7. Garlic Ginger : 3 table spoon paste
  8. Red Chili powder : ½ tea spoon
  9. Turmeric powder : ¼ tea spoon
  10. Shah Zeera powder : ½ tea spoon
  11. Dal Cheeni : ½ tea spoon
  12. Salt : as required
  13. Green Chilly : 4 each to be cut in to small pcs.
  14. Dhania green : 1 table spoon
  15. Pudina : 10 leafs
  16. Food color : ¼ tea spoon

  • Preparation of Yaqni:
  1. Cut onion in to thin slices and fry until brown, half of the fried onion to be crush
  2. Wash chicken and cut in to 8 pieces from each and rinse water from it
  3. Chicken to be mixed with: Item no.: 4 (half only) to 14

  • Preparation of Rice:
  1. Wash rice twice
  2. Boil rice with pudina, dal cheeni and shah zeera
  3. When its half boiled, remove from stove and throw remaining water completely
  4. Put half of the total rice remain in the utensil and put Yaqni in to it
  5. Remaining rice to be put on Yaqni

  • Final Bake:
  1. Add food color in to half cup of cold milk
  2. Put on top of the rice in the utensil
  3. Remaining fried onions to be put on top of the rice
  4. Remaining oil/ghee to put from top of the rice
  5. Keep air tight cover on the utensil
  6. Keep 25 min for baking on mild fire
  7. Your Biryani is ready to serve

  • Prior to Serve:

Mix completely, rice and Yaqni and serve
