You can stop the delivery of the email if you hit the send button soon.

To enable this feature just go to Settings -> Labs and you will find a feature called Undo Send. Click Enable to activate this feature. Then click save changes.

After you hit the send button you have to act quickly to cancel the message. Gmail will give you 10 seconds to cancel the message.
